Ingredients:
- 1 medium red cabbage
- 2 large carrots
- 1 small red apple
- 4 tablespoons of apple cider vinegar
- 2 tablespoons of olive oil
- 1 teaspoon of honey
- Salt and freshly ground black pepper to taste
- 1 teaspoon of mustard (optional)
- Sunflower or pumpkin seeds for sprinkling (optional)
Preparation:
- Take the red cabbage, remove the outer leaves and cut it into thin strips. Place it in a large bowl.
- Clean the carrots and grate them or cut them into thin strips using a julienne peeler. Add them to the cabbage.
- Cut the apple into thin slices or cubes (if desired, you can peel it or leave the skin on for extra fiber) and mix with the other ingredients in the bowl.
- In a small separate bowl, mix the apple cider vinegar, olive oil, honey, salt and pepper (add mustard if you want a little more spiciness). Mix well until the ingredients are combined.
- Pour the dressing over the salad and mix well so that everything is coated evenly. If you have time, leave the salad in the fridge for half an hour, so that the flavors combine.
- Before serving, sprinkle the salad with sunflower or pumpkin seeds for a crunchy texture and an extra nutritional boost.
